Baked Oatmeal

In a bowl mix:

  • 2 1/2 cups oats
  • 2 1/2 cups warm filtered water
  • 5 Tablespoons whey, yogurt, or kefir

Soak overnight in a warm place 7 hours or up to 24 hours (covered in the microwave works well).

In the morning beat together:

  • 1/2 cup coconut oil
  • 4 eggs
  • 1/2 cup whole cane sugar, maple syrup, or honey

Add:

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla

Variations:

  • add 1/2 cup of chopped nuts
  • add 1/2 cup of raisins
  • add 1/4-1/2 teaspoon each of ginger, nutmeg, and cloves for extra spicy flavor
  • add 1/2 cup of dried cranberries
  • add 1 cup diced apples

Stir in soaked oatmeal and pour into a greased 9x13 baking pan. Bake at 350 degrees for 20 minutes or until solid.

This is excellent with organic milk for a healthy, hearty breakfast. Store leftovers in a sealed container in the refrigerator. Heat up for second and third day leftovers - it’s just as good.
