Baked Oatmeal

In a bowl mix:
- 2 1/2 cups oats
- 2 1/2 cups warm filtered water
- 5 Tablespoons whey, yogurt, or kefir
Soak overnight in a warm place 7 hours or up to 24 hours (covered in the microwave works well).
In the morning beat together:
- 1/2 cup coconut oil
- 4 eggs
- 1/2 cup whole cane sugar, maple syrup, or honey
Add:
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 2 teaspoons vanilla
Variations:
- add 1/2 cup of chopped nuts
- add 1/2 cup of raisins
- add 1/4-1/2 teaspoon each of ginger, nutmeg, and cloves for extra spicy flavor
- add 1/2 cup of dried cranberries
- add 1 cup diced apples
Stir in soaked oatmeal and pour into a greased 9x13 baking pan. Bake at 350 degrees for 20 minutes or until solid.
This is excellent with organic milk for a healthy, hearty breakfast. Store leftovers in a sealed container in the refrigerator. Heat up for second and third day leftovers - it’s just as good.
