Hearty Chicken Soup

2 chicken leg quarters (with bones, makes a better broth) or chicken breast
2 quarts fresh water
2 chopped carrots
2 chopped celery
1 chopped onion
1 potato (optional)
1/4 cup wheat berries or rice (optional)
1-2 cups egg noodles
1/4 cup fresh parsley, chopped or 1 Tbs. dry parsley
1/2 tsp. garlic powder
Salt
Pepper

Wash chicken. Bring chicken to a boil in water with garlic powder on high heat. Let simmer covered for 15 minutes while chopping vegetables. Skim foam from the broth (add more water if needed). Add vegetables. Let boil slowly covered for 20 minutes, or until veggies are soft. Remove chicken and debone. Add noodles while deboning and let boil slowly. Add deboned chopped chicken, parsley, salt, and pepper to taste. Remove from heat when noodles are tender (about 10 minutes). Serve during cold season with whole wheat bread for a tasty healthy meal.
